I think things through only in more abstract terms - structure, characterisation, plot, character arcs, that sort of thing; I can't let myself think about dialogue or any of the actual words of the fic unless I'm actually writing them down. Otherwise I will always be convinced that the version in my head was better, and the version I write down eventually is only a pale imitation. *g*
